500g pork fillet (or lean beef)

1 white onion, chopped

3 bell peppers (any color), sliced

1 tbsp olive oil

2 tsp smoked paprika

1 tsp chili powder

1 tsp dried oregano

2 tbsp tomato puree

2 tbsp red wine vinegar (or white wine vinegar)

1 can chopped tomatoes

250ml beef, chicken, or vegetable stock

Black pepper, to taste

Fresh parsley, for garnish

Instructions:

1. Prepare the Vegetables

Peel and chop the onion.

Slice the bell peppers and set them aside.

2. Cook the Pork

Heat olive oil in a large pan over medium-high heat.

Add the pork fillet and cook for 5-10 minutes until browned on the outside.
