500g pork fillet (or lean beef)
1 white onion, chopped
3 bell peppers (any color), sliced
1 tbsp olive oil
3 cloves garlic, minced (or 15g)
2 tsp smoked paprika
1 tsp chili powder
1 tsp dried oregano
2 tbsp tomato puree
2 tbsp red wine vinegar (or white wine vinegar)
1 can chopped tomatoes
250ml beef, chicken, or vegetable stock
Black pepper, to taste
Fresh parsley, for garnish
Instructions:
1. Prepare the Vegetables
Peel and chop the onion.
Slice the bell peppers and set them aside.
2. Cook the Pork
Heat olive oil in a large pan over medium-high heat.
Add the pork fillet and cook for 5-10 minutes until browned on the outside.
3. Add the Onion and Garlic
Add the chopped onion to the pan and cook for a few minutes until slightly golden.
Stir in the minced garlic and cook for another 30 seconds to a minute.
4. Add Spices and Peppers
Mix in smoked paprika, chili powder, oregano, and tomato puree.
Stir well and cook for another minute.
5. Add Liquids and Simmer
Add the sliced peppers, red wine vinegar, chopped tomatoes, and stock.
Season with black pepper and stir everything together.
