2 tbsp olive oil

2 large chicken breasts (about 1 ½ lbs), cut in half lengthwise
For the Fajitas:
1 tbsp oil (for cooking the chicken)
1 tbsp oil (for cooking the veggies)
1 medium onion, thinly sliced
3 bell peppers (any color), sliced into ¼-inch strips
6-8 small tortillas
Optional Toppings:
Fresh lime wedges
Chopped cilantro
Avocado or guacamole
Shredded cheese (Monterey Jack, cheddar, or mozzarella)
Salsa or pico de gallo
Sour cream
Shredded iceberg lettuce
Instructions
Step 1: Marinate the Chicken
In a large mixing bowl, combine the lime juice, olive oil, and spices. Stir well. Add the chicken cutlets and coat them evenly in the marinade. Let them rest at room temperature while prepping the veggies.
Step 2: Prepare the Vegetables
