For a Small Turkey (10-14 lbs)
⅓ cup honey
⅓ cup fish sauce
1 ½ tablespoons curry powder
1 tablespoon chicken bouillon

1 ½ tablespoons paprika or chili powder

1 ½ tablespoons sugar
3 tablespoons oyster sauce
⅔ stick unsalted butter
For a Large Turkey (17-20 lbs)
⅔ cup honey
⅔ cup fish sauce
2 ½ tablespoons curry powder
2 tablespoons chicken bouillon
2 ½ tablespoons garlic powder
2 tablespoons paprika or chili powder
Black pepper to taste
2 tablespoons sugar
4 tablespoons oyster sauce
1 stick unsalted butter
How to Prepare the Turkey
1. Prepare the Marinade
1. In a small saucepan, melt the butter over low heat.
2. Add honey, fish sauce, curry powder, chicken bouillon, garlic powder, paprika (or chili powder), black pepper, sugar, and oyster sauce. Mix well.
3. Let the marinade cool slightly before applying.
