Ingredients

For Garlic Butter:

3 garlic cloves (peeled)

A handful of coriander leaves

100g butter (softened)

1 tbsp oregano (or mixed herbs)

1 tbsp red chili flakes

For Tandoori Chicken:

500g boneless chicken breast (cubed)

1 tsp turmeric powder

1 tbsp red chili powder

1 tbsp black pepper powder

A pinch of food color (optional)

1 tbsp green chili and garlic paste

For Assembling the Bread:

4 ladi pav (or any soft bread rolls)

4 slices of processed cheese

½ cup mozzarella cheese (diced or grated)

Step-by-Step Instructions

Step 1: Prepare the Garlic Butter

1. Blend the garlic and coriander leaves into a coarse paste.

2. In a bowl, mix the softened butter with oregano, chili flakes, and the garlic-coriander paste.

3. Stir well until fully combined. This butter can be stored in the refrigerator for up to 2–3 months.

Step 2: Marinate the Chicken

1. In a bowl, add the chicken cubes along with turmeric, red chili powder, black pepper powder, food color (if using), and green chili-garlic paste.

2. Mix everything well and let it marinate for 30 minutes in the refrigerator.

Step 3: Cook the Chicken

1. Heat ½ tbsp oil in a frying pan over high heat.

2. Add the marinated chicken cubes and cook until they change color.

3. Once the chicken starts releasing water, lower the flame, cover, and cook for 5 minutes.

4. Remove the lid and cook on high flame until all the excess water evaporates.

5. Set aside and let the chicken cool.

Step 4: Assemble the Garlic Bread

1. Slice the ladi pav in half (like a burger bun).

2. Generously spread the garlic butter on both halves.

3. Place a slice of processed cheese over the buttered bread.

4. Sprinkle mozzarella cheese over the top.

5. Add the cooked tandoori chicken pieces.

6. Sprinkle some more mozzarella cheese for extra richness.

Step 5: Bake and Serve

1. Preheat your oven to 160°C (320°F) for 10 minutes.

2. Place the prepared bread on a baking tray and bake for 10 minutes until the cheese melts and turns golden.

3. Remove from the oven and cut the bread into strips.
