800 g beef (e.g., shoulder or rib)
2 tbsp flour
2 tbsp butter
2 tbsp vegetable oil
1 onion (diced)
2 carrots (sliced)
2 celery stalks (chopped)
1 tbsp tomato paste
500 ml beef stock
2 potatoes (cut into chunks)
Salt and pepper (to taste)
1 tsp paprika
1 tsp dried thyme
Instructions
Step 1: Prepare the Beef
Cut the beef into medium-sized chunks and coat them lightly with flour.
Heat the butter and vegetable oil in a large pot over medium heat.
Sear the beef until browned on all sides, then remove and set aside.
Step 2: Sauté the Vegetables
In the same pot, add the diced onion, carrots, and celery.
Sauté for about 5 minutes until they soften.
Step 3: Build the Flavor
Stir in the tomato paste and cook for 1 minute to enhance its depth.
