Ingredients
For the Steak
2 filet mignon steaks (8oz / 300g each)
4 slices prosciutto
Salt, to taste
Black pepper, to taste
1 tbsp olive oil
2 tbsp unsalted butter
3-4 garlic cloves, smashed
2 sprigs thyme
1 sprig rosemary
For the Red Wine Sauce
1 small shallot, finely chopped
½ cup dry red wine
½ cup beef stock
½ tsp brown sugar
1 tsp balsamic vinegar
1 bay leaf
1 ½ tbsp butter
Instructions
Step 1: Prepare the Steaks
Season both sides of the filet mignon with salt and black pepper.
Wrap each steak tightly with two slices of prosciutto around the sides.
Step 2: Sear the Steaks
Heat olive oil in a large frying pan over medium heat.
Sear the steaks for about 3 minutes per side until a deep golden crust forms.
Step 3: Infuse with Aromatics and Bake
Drain excess oil from the pan and lower the heat to medium-low.
Add 1 tbsp butter, smashed garlic, thyme, rosemary, and bay leaf.
