While it might seem complicated, it’s easier than you think! Here’s a step-by-step guide to creating the perfect pot roast.

Ingredients You'll Need:

For the Roast:

3.5 to 4.5 lb boneless chuck roast (look for good marbling)

1 ½ tablespoons salt (about 1 tsp per pound)

Freshly ground black pepper (to taste)

¼ cup all-purpose flour (for coating)

2 tablespoons oil (for searing)

½ cup Marsala wine (for deglazing)

4 cloves garlic, sliced

1 bay leaf

3 sprigs fresh thyme

1 tablespoon Dijon mustard

For the Vegetables:

1 lb carrots, peeled and cut into 1 to 1 ½ inch pieces

1 ½ lbs potatoes, halved or quartered

2 sweet onions, halved crosswise

For the Gravy (Optional):

1 tablespoon cornstarch

1 tablespoon cold water

Step-by-Step Instructions:

1. Prep and Season the Meat

Start with a boneless chuck roast, around 3.5 to 4.5 lbs. The marbling of fat throughout the meat ensures rich flavor and tenderness.

Pat the roast dry with paper towels. This helps the seasoning stick.
