Mexican Lasagna Recipe

Ingredients:

For the Meat Mixture:

  • 2 lbs ground beef

  • 1 cup chopped onions

  • 2 packets taco seasoning (follow package instructions)

  • 1 can spicy refried beans

  • 1 can mild refried beans

For the Layers:

  • 6 large burrito-sized flour tortillas

  • 2 cans corn (drained)

  • 2 jars salsa (your favorite brand)

  • 4 cups shredded Mexican cheese blend

For Baking:

  • Cooking spray

  • Aluminum foil

Instructions:

Step 1: Brown the Ground Beef

  • In a large skillet over medium heat, cook the ground beef. Break it up as it cooks.

  • Season with steak seasoning, garlic powder, and onion powder.

  • Once the meat starts browning, add chopped onions and continue cooking.

Step 2: Add Seasoning and Beans

  • Stir in taco seasoning (follow packet instructions).

  • Once fully cooked, turn off the heat and mix in refried beans while the meat is still hot. This will make spreading easier later.

Step 3: Assemble the Layers

  • Preheat your oven to 350°F (175°C).

  • Grease a 9x13-inch baking dish with cooking spray.

  • Place a layer of tortillas at the bottom (trim if necessary to fit).

  • Spread half of the beef and bean mixture over the tortillas.

  • Add one can of drained corn evenly over the mixture.

  • Pour one jar of salsa over the layer.

  • Sprinkle almost 2 cups of shredded cheese over the salsa.

Step 4: Build the Second Layer

  • Add another layer of tortillas.

  • Spread the remaining beef and bean mixture.

  • Add the second can of drained corn.

  • Pour the second jar of salsa.

  • Sprinkle the remaining 2+ cups of cheese evenly over the top.

Step 5: Bake the Lasagna

  • Cover the dish with foil and bake at 350°F for 40 minutes.

  • Remove the foil and bake for another 10 minutes until the cheese is golden and bubbly.

Step 6: Serve & Enjoy!

  • Let the lasagna rest for a few minutes before slicing.

  • Serve with sour cream, extra salsa, or guacamole on the side.

  • Dig in and enjoy this cheesy, flavorful Mexican-inspired dish!
