4 pieces of fish (Blue Eye or any firm white fish) – approx. 250g (8oz) each
Handful of parsley leaves, chopped
½ cup olive oil

Preheat your oven to 350°F (180°C) to ensure it’s ready for baking.
Step 2: Prepare the Base
In a baking dish, drizzle half of the olive oil. Add in the cherry tomatoes and their juices, fennel seeds, olives, capers, anchovies, chopped spring onions, and white wine. Season lightly with salt and pepper, then mix well.
