Filipino Bistek (Steak and Onions)
How to Make Filipino Bistek (Steak and Onions) at Home
Bistek, or Filipino steak and onions, is a simple yet flavorful dish that holds a special place in many hearts. It’s a comforting meal made with tender beef slices, soy sauce, onions, and calamansi juice. Since calamansi isn’t always easy to find, a mix of lime and lemon works as a great substitute, balancing the dish with both tanginess and sweetness.
If you’re looking for an easy, delicious way to enjoy Filipino flavors, this bistek recipe is perfect for you!
Ingredients
1 lb flank steak (or sirloin)
½ cup soy sauce
Juice of 1 lime and 1 lemon (or calamansi, if available)
1 tsp sugar
1 large onion, sliced into strips
3 cloves garlic, finely chopped
1 small piece of ginger, finely chopped
½ tsp baking soda
Freshly ground black pepper (to taste)
2 tbsp oil
Instructions
Step 1: Prepare the Beef
Start by trimming off any silver skin from the flank steak and slicing it into thin strips against the grain. This technique shortens the meat fibers, resulting in a more tender bite.
Step 2: Marinate the Meat
In a bowl, combine the soy sauce, lime juice, lemon juice, and sugar. Add the beef and season with freshly ground black pepper. Mix well and let it marinate for about 20 minutes. Just before cooking, sprinkle in the baking soda and mix again. This helps keep the meat tender.
Step 3: Cook the Onions
Heat a large pan or wok over medium heat and add a tablespoon of oil. Add the sliced onions and cook them in two batches:
Half of the onions should be lightly fried until they are soft but still retain some sharpness. Remove and set aside.
The other half should be cooked longer until caramelized, adding a natural sweetness. Set aside.
Step 4: Cook the Beef
Add another tablespoon of oil to the pan. Toss in the marinated beef and cook over medium heat. Unlike stir-frying, the goal here is to let the meat release its juices, which will form the flavorful sauce.
After a few minutes, add the garlic and ginger. Stir everything together and cook until fragrant. Then, mix in the sugar for a touch of sweetness.
Step 5: Reduce the Sauce
Once the beef is fully cooked, remove it from the pan and turn up the heat. Let the sauce reduce by about half. If you prefer a thicker sauce, a cornstarch slurry can be added at this stage.
Step 6: Assemble and Serve
Plate the bistek with the firmer onions on the bottom and the caramelized onions on top for contrast. Finally, drizzle the reduced pan sauce over the dish. Serve hot with a generous portion of steamed rice.
Final Thoughts
Bistek is a comforting dish that proves simple ingredients can create deep, satisfying flavors. The balance of tangy citrus, savory soy sauce, and tender beef makes it a favorite in many Filipino households.
