High-Protein Taco Meat Recipe – Meal Prep for Quick and Healthy Meals

Having taco meat ready in your fridge is an excellent way to prepare quick, high-protein meals with minimal effort. This recipe uses extra-lean ground beef, keeping the fat content low while maximizing flavor. Whether you’re looking for a healthy meal prep option or just a fast and tasty dinner, this taco meat is perfect.

Why Extra-Lean Ground Beef?

For this recipe, extra-lean ground beef (5% fat) is used instead of regular ground beef (20% fat). The difference in fat content significantly reduces calories while maintaining a rich and meaty texture. You’ll notice that extra-lean beef has a much deeper red color due to the lower fat content.

Ingredients:

400g extra-lean ground beef

100g yellow onion (diced)

1/2 tsp garlic powder

1/2 tsp paprika

1/4 tsp cumin

1/4 tsp chili powder

1/2 tsp oregano

Black pepper and salt (to taste)

15g tomato puree

200g tomato salsa or passata

1 tsp olive oil

Instructions:

Step 1: Cook the Onions

1. Heat a non-stick pan over medium heat and add a small amount of oil.

2. Add the diced onions with a pinch of salt.

3. Cook for 2-3 minutes until the onions become translucent and slightly caramelized.

Step 2: Brown the Beef

1. Push the onions to the side of the pan and add a little more oil.

2. Add the ground beef and break it apart with a spatula.

3. Let it brown for about a minute before stirring.

Step 3: Add Seasonings

1. Sprinkle in the garlic powder, paprika, cumin, chili powder, oregano, salt, and pepper.

2. Stir well to evenly coat the beef and onions with the spices.

Step 4: Simmer with Tomato Sauce

1. Add the tomato puree and salsa (or passata) along with a splash of water.

2. Stir everything together and let it simmer for 1-2 minutes until the sauce thickens.

Step 5: Store for Later

1. Transfer the cooked taco meat into a container.

2. Let it cool for a few minutes before sealing and storing it in the fridge.

3. It will stay fresh for 3-5 days.
