Ingredients
2 tbsp all-purpose flour
½ tsp freshly ground black pepper
1 pound (450g) beef stewing meat
2 tbsp olive oil
4 tbsp butter
1 medium onion, chopped
4 medium carrots, sliced
2 tbsp red wine vinegar
1 cup (240ml) red wine
2 bay leaves
3 ½ cups (830ml) beef broth (homemade or low-sodium canned)
2 large potatoes, diced
2 tsp salt
Extra black pepper to taste
Instructions
1. In a bowl, toss the beef with flour and pepper until well coated.
2. Heat 2 tbsp oil in a large pot over medium-high heat. Add the beef and brown it on all sides (about 5 minutes per batch). Remove and set aside.
3. In the same pot, add butter, onions, and carrots. Sauté for a few minutes.
4. Pour in red wine vinegar and red wine, scraping the pan with a wooden spoon to loosen browned bits.
5. Add bay leaves and beef broth. Return the beef to the pot. Cover and simmer for 1 hour, or until the beef is tender.
6. Stir in the potatoes and simmer for an additional 30 minutes, until all vegetables are tender.
7. Season with salt and black pepper. Remove bay leaves before serving.

Recipe 2: Creamy Beef Stroganoff
A rich and creamy beef stroganoff that pairs perfectly with pasta for a comforting meal!
Ingredients
2 tbsp olive oil
700g boneless ribeye steak
Salt & black pepper (to taste)
3 tbsp butter
1 large onion, sliced
300g mushrooms, sliced
2 tbsp all-purpose flour
3 ½ cups (830ml) beef broth
3 tbsp sour cream
1 tbsp Dijon mustard
300g pasta of your choice
Chives (optional)
Instructions
1. Use a kitchen mallet to pound the steak flat, then cut it into thin strips. Halve long strips and remove excess fat. Season with salt and pepper.
2. Heat 1 tbsp olive oil in a large pan over high heat. Add half the beef and spread evenly with tongs. Let it brown for 30 seconds without stirring, then flip and brown the other side. Remove and repeat with the remaining beef. Set aside.
3. Reduce heat to medium and add butter to the same pan. Add onions and cook for 2-3 minutes until soft.
4. Add mushrooms and cook until golden brown.
5. Stir in flour and cook for 1 minute. Gradually add half of the broth, stirring constantly. Then add the remaining broth.
6. Stir in sour cream and Dijon mustard. Let simmer for 3-5 minutes.
7. Return the beef to the pan and simmer for 1 minute. Remove from heat.
8. Meanwhile, cook the pasta according to package directions. Drain and serve with the stroganoff.
9. Garnish with chopped chives if desired.
