If you’ve ever craved tender, juicy, fall-off-the-bone baby back ribs but don’t have a smoker or grill, don’t worry! This oven-baked ribs recipe will give you that smoky, caramelized barbecue flavor with minimal effort. Perfect for any occasion, these ribs are guaranteed to impress.
Ingredients
For the Ribs:
1 rack of baby back ribs
1 tbsp liquid smoke (optional)
1 tbsp yellow mustard (or olive oil/hot sauce)
1 tbsp all-purpose seasoning
2 tbsp barbecue rub
For the Wrap:
4 tbsp butter
2 tbsp brown sugar
2 tbsp honey
½ cup liquid (beer, apple juice, or stock)
For the Barbecue Sauce:
2 tbsp butter
2 tbsp brown sugar
1 cup ketchup
1 tsp liquid smoke
1 tbsp chipotle sauce (from canned chipotle in adobo)
2 tbsp honey
1 tbsp molasses
Instructions
Step 1: Prep the Ribs
1. Preheat your oven to 275°F (135°C).
2. Trim any excess fat from the ribs. Remove the membrane from the back using a knife or spoon, gripping it with a paper towel for easy removal.
3. Brush the ribs with liquid smoke, then coat them with mustard to help the seasoning stick.
4. Generously season both sides with all-purpose seasoning and barbecue rub.
Step 2: Bake the Ribs (First Cook)
1. Place the ribs on a baking sheet lined with foil, bone side down.
2. Bake uncovered for 2.5 to 3 hours until tender.
Step 3: Wrap & Tenderize
1. Lay out a large piece of foil and spread butter, brown sugar, and honey on the bottom.
2. Place the ribs meat side down, then add more butter, brown sugar, and honey on top. Pour in the liquid of your choice.
3. Wrap tightly and bake for another 1.5 to 2 hours.
Step 4: Make the Barbecue Sauce
1. In a saucepan over medium-low heat, melt butter and add brown sugar.
2. Stir in ketchup, liquid smoke, and chipotle sauce.
3. Add honey and molasses, mixing well. Simmer for a few minutes until smooth.
Step 5: Sauce & Caramelize
1. Unwrap the ribs and check for tenderness (a thermometer or toothpick should slide in with little resistance).
2. Brush generously with barbecue sauce.
3. Increase oven temperature to 325°F (163°C) and bake for 15-20 minutes until the sauce caramelizes.
