3 ½ lb top round roast (or similar lean cut)
2 tbsp olive oil
3 garlic cloves (minced)
1 tbsp fresh rosemary (chopped)

Instructions
1. Prepare the Roast
Remove the roast from the refrigerator and let it sit at room temperature for 30-45 minutes.
Preheat your oven to 450°F (230°C).
In a bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper. Rub this mixture all over the roast.
