Ingredients
1 cup ghee (you can also use oil, but ghee gives the best flavor)
1 kg beef (cut into small pieces) – you can also use mutton
1 tbsp garlic paste
1 tbsp ginger paste (to be added later)
½ tbsp red chili powder
1 tsp turmeric powder
1 tbsp salt
1 tbsp crushed coriander
1 tsp roasted cumin powder
6 medium tomatoes (finely chopped)
1 liter water
1 tsp ginger paste (added later for extra flavor)
1 tsp green chili paste
3 tbsp yogurt
6-7 whole green chilies
Fresh coriander (chopped)
Julienne-cut ginger for garnish
Instructions:
Step 1: Cooking the Beef
Heat ghee in a pan. Once it's hot, add the beef pieces.
Sauté the beef for about 10 minutes, stirring occasionally, until it turns a beautiful golden brown.
The beef will release some water. Continue cooking until all the water evaporates and the beef is well-browned.
Step 2: Adding the Spices
Add garlic paste and sauté for 1-2 minutes.
Now, add red chili powder, turmeric powder, salt, crushed coriander, and roasted cumin powder.
To prevent the spices from burning, add a little water and mix well.
Sauté the spices for 3-4 minutes until the oil separates.
Step 3: Cooking the Tomatoes
Add chopped tomatoes and cover the pan for 5 minutes to soften their skin.
Once soft, remove the tomato skins as they are not very healthy and can affect the texture of the dish.
Mash the tomatoes well and sauté for another 5 minutes until they blend completely into the gravy.
Step 4: Cooking the Beef Further
Add 1 liter of water, cover the pan, and let it cook on low heat for about 30 minutes until the beef is fully tender.
After 30 minutes, check if the beef is fully cooked and soft.
Step 5: Final Touches
Now, add ginger paste and green chili paste for an extra burst of flavor.
Stir well and let it cook for another 2-3 minutes.
Add yogurt and mix quickly to prevent curdling.
Sauté for another 3-4 minutes until the oil separates.
Step 6: Garnishing and Serving
Finally, add whole green chilies, chopped coriander, and julienned ginger for an aromatic touch.
Mix well and turn off the heat.
Your Delicious Beef Karahi is Ready!
