Ingredients

1 tbsp unsalted butter

1 tbsp oil

1 large onion, thickly sliced

200g (7 oz) baby chestnut mushrooms, thickly sliced

400g (14 oz) ribeye steak, cut into 1 cm slices

1 tbsp oil (for the steak)

Salt and pepper, to taste

240ml (1 cup) double heavy cream

180ml (⅔ cup) sour cream

¼ tsp salt

¼ tsp pepper

Paprika and parsley, for garnish

Instructions

Step 1: Sauté the Onions and Mushrooms

1. Heat 1 tbsp butter and 1 tbsp oil in a frying pan over medium-high heat until the butter starts to foam.

2. Add the sliced onion and cook for 5 minutes, stirring often, until softened.

3. Add the sliced mushrooms and cook for 3-4 minutes, stirring frequently, until lightly browned.

4. Transfer the onions and mushrooms to a bowl and set aside.

Step 2: Cook the Steak

5. Place the pan back on high heat.

6. Drizzle the sliced steak with 1 tbsp oil and season with salt and pepper.

7. Add the steak to the pan in a single layer and cook for about 1 minute until a crust starts to form.
