Beef (sliced against the muscle fibers)
Frozen or dry udon noodles (follow package instructions if using dry)
For the beef marinade:
Soy sauce
Dark soy sauce
Sugar
Black pepper powder
Baking soda (pinch)
Cornstarch
Water
Oil (for marinating and stir-frying)
For the stir-fry sauce:
Soy sauce
Dark soy sauce
Sugar
Preparation Steps:
1. Marinate the Beef:
Slice the beef against the muscle fibers.
Marinate beef with soy sauce, dark soy sauce, sugar, black pepper, baking soda, cornstarch, and water. Mix thoroughly and let it sit.
2. Prepare the Udon:
Boil a pot of water and add frozen or dry udon. For frozen udon, cook for 2 minutes; for dry, follow package instructions. Drain and add a little oil to prevent sticking.
3. Stir-fry the Vegetables:
Heat oil in a pan. Briefly stir-fry the onion strips for 20-30 seconds to remove the raw taste, then remove from the pan.
Stir-fry cabbage until hot and softened, adding a little dark soy sauce for color and flavor, then remove from the pan.
4. Stir-fry the Beef:
Heat the pan again, add oil, and fry the beef until the bottom is slightly brown. Add minced garlic and cook until the beef is 50% done.
Add dark soy sauce for color and continue stir-frying until the beef is fully cooked, then remove from the pan.
5. Stir-fry the Udon:
Heat oil in the pan and pan-fry the udon until crispy in some spots. Add the stir-fry sauce and mix evenly.
Add the cabbage back into the pan, cover, and cook for 20-30 seconds.
6. Combine and Final Stir-fry:
Add the beef and onions back to the pan. Stir everything together, add black pepper, and stir-fry for a final few seconds. And you’re done!
