Beef Sufyani Biryani is a unique and delicious dish that combines aromatic spices, tender beef, and fragrant rice. Follow this step-by-step recipe to create a mouthwatering biryani that will impress your family and guests.

Ingredients

For Boiling the Meat:

  • 1 kg boneless beef

  • A few beef bones (for extra flavor)

  • 1 onion (chopped)

  • 1 teaspoon salt

  • ½ teaspoon ginger paste

  • ½ teaspoon garlic paste

  • Water (as needed)

  • 4-5 green chilies

For the Rice:

  • 2 cups premium quality basmati rice (Kainat 1121 or similar)

  • 10 almonds (soaked and ground into a paste)

  • Water for soaking (at least 1 hour)

For the Biryani Masala:

  • 1 cup mustard oil (or any preferred oil)

  • 3 onions (thinly sliced)

  • ½ tablespoon ginger paste

  • ½ tablespoon garlic paste

  • 4 green cardamoms

  • 1 black cardamom

  • 2 bay leaves

  • 5-6 cloves

  • 1 teaspoon black pepper

  • A small cinnamon stick

  • 1 tablespoon white cumin seeds

  • 1 cup whipped yogurt

  • 1 teaspoon fennel powder

  • 2 teaspoons coriander powder

  • 1 teaspoon black pepper powder (or white pepper)

  • 1 teaspoon garam masala

  • 1 teaspoon cumin powder

  • 1½ teaspoons salt (adjust to taste)

  • 2-3 tablespoons lemon juice

  • 150 ml fresh cream

For Layering:

  • Fresh coriander (chopped)

  • Mint leaves

  • 1-inch ginger (julienned)

  • ½ cup milk

  • ½ teaspoon kewra water

  • 2 liters water (for boiling rice)

Step-by-Step Instructions

Step 1: Boil the Beef

  1. In a pressure cooker, add beef, bones, green chilies, chopped onion, salt, ginger paste, garlic paste, and enough water to cook for 25 minutes.

  2. Once done, let the pressure release naturally, then dry any remaining water by cooking on high heat.

Step 2: Prepare the Fried Onions

  1. Heat mustard oil in a pan and fry the sliced onions until golden brown.

  2. Remove and spread them on a paper towel to retain their crispiness.

Step 3: Cook the Biryani Masala

  1. In the same oil, add ginger paste, garlic paste, green chilies, and all whole spices. Sauté for a minute.

  2. Add the boiled beef and cook for 2-3 minutes.

  3. Lower the heat and mix in the yogurt. Let it simmer.

  4. Add fennel powder, coriander powder, black pepper, garam masala, cumin powder, and salt. Mix well.

  5. Stir in the almond paste, lemon juice, and fresh cream. Simmer until the masala thickens slightly.

Step 4: Prepare the Rice

  1. In a large pot, boil 2 liters of water with salt.

  2. Add soaked rice and cook until 60% done. Drain immediately.

Step 5: Layering the Biryani

  1. In a heavy-bottomed pot, spread half of the rice as the first layer.

  2. Add the prepared beef masala on top.

  3. Sprinkle fried onions, chopped coriander, mint leaves, and green chilies.

  4. Add the remaining rice as the second layer.

  5. Pour milk and kewra water evenly over the top.

  6. Cover with a cloth and seal with a lid.

Step 6: Final Cooking (Dum Method)

  1. Cook on high heat for 2-3 minutes, then reduce the flame to low.

  2. Let it cook for 20 minutes.

  3. Turn off the heat and let it rest for 10 minutes before serving.
