Here’s a step-by-step guide to making this mouthwatering recipe at home.

Ingredients

For Pressure Cooking the Beef:

1 kg Beef

1 tbsp Coriander Powder

½ tbsp Chilli Powder

¾ tsp Turmeric Powder

½ tbsp Crushed Black Pepper

1 tsp Homemade Garam Masala (or 1 tbsp Meat Masala)

6 cloves Garlic (chopped)

1-inch piece Ginger (chopped)

2 Green Chilies (chopped)

1½ tsp Salt

1 tsp Lime Juice

For Roasting the Beef:

3 tbsp Ghee (or Coconut Oil)

½ tsp Mustard Seeds

1-inch piece Ginger (chopped)

6 cloves Garlic (chopped)

30 Shallots (sliced)

2 sprigs Curry Leaves

½ tsp Salt

2 tbsp Coriander Powder

1 tsp Homemade Garam Masala (or 2 tsp Meat Masala)

½ - 1 tbsp Crushed Black Pepper (adjust to taste)

Instructions

Step 1: Pressure Cooking the Beef

1. Add the beef to a pressure cooker.

2. Add coriander powder, chili powder, turmeric powder, crushed black pepper, and garam masala (or meat masala).

3. Add chopped garlic, ginger, green chilies, salt, and lime juice.

4. Mix well to combine all ingredients.

5. No need to add water, as the meat will release enough moisture while cooking.

6. Close the pressure cooker lid and cook on high flame until the first whistle.

7. Reduce the flame and continue cooking for 2-3 more whistles.

8. Turn off the heat and let the pressure release naturally for 15-20 minutes.

(Note: Cooking time may vary depending on the type of beef and the pressure cooker used. In some regions, it may take 5-6 whistles to cook completely.)

Step 2: Preparing the Roast

1. Heat a pan and add ghee (or coconut oil).

2. Once hot, add mustard seeds and let them splutter.

3. Lower the flame to medium and add chopped ginger and garlic. Mix well.

4. Add sliced shallots and mix. The more shallots used, the tastier the dish will be.

5. Add curry leaves and ½ tsp salt. Stir and sauté until the shallots turn golden brown.

6. Add coriander powder and garam masala (or meat masala). Roast well until the raw smell disappears.

7. Add the cooked beef along with its juices and mix well.

8. Cook until the gravy thickens and the beef reaches a roast consistency.

9. Add crushed black pepper (adjust according to taste) and mix well.

10. Check the salt and tanginess. If needed, add more lime juice.

11. Turn off the flame and let it rest for 10-15 minutes before serving. This helps balance the flavors.
