3 kilos of beef (preferably brisket with some fat)
1 cup soy sauce
½ cup vinegar
3-4 liters of water
1 large onion, chopped
6 cloves garlic, minced

2 bay leaves
2 star anise
1 tsp black pepper
1 tsp Chinese five-spice powder
3 tbsp brown sugar (adjust to taste)
Cornstarch slurry (2 tbsp cornstarch mixed with 4 tbsp water)
