Ingredients:

  • ½ tbsp oil

  • 1 lb medium ground beef

  • ½ small onion, chopped

  • 3 cloves garlic, chopped

  • 1 box Kraft Dinner (or any mac & cheese mix)

  • 1 can (14 oz) diced tomatoes (undrained)

  • 1 cup milk (2% or whole milk)

  • 2 tsp Italian seasoning

  • ½ to 1 tsp salt (to taste)

  • 1 cup canned or fresh corn

  • 1 cup shredded cheddar cheese

Instructions:

Step 1: Brown the Beef

  • Heat ½ tbsp of oil in a large skillet over medium-high heat.

  • Add 1 lb of ground beef and break it up as it cooks.

  • Fry until the beef is browned (about 5 minutes).

Step 2: Sauté the Aromatics

  • Push the beef to one side of the pan.

  • Add ½ a small chopped onion and 3 cloves of chopped garlic.

  • Sauté for 2-3 minutes, until fragrant.

  • Mix everything together.

Step 3: Add the Mac & Cheese and Liquids

  • Sprinkle the cheese packet from the Kraft Dinner over the beef.

  • Pour in 1 can of diced tomatoes (undrained) and 1 cup of milk.

  • Add the pasta from the Kraft Dinner and stir gently.

Step 4: Season & Add Veggies

  • Season with 2 tsp Italian seasoning, ½ to 1 tsp salt, and 1 to 2 tsp ground black pepper.

  • Add 1 cup of frozen peas and 1 cup of canned corn.

  • Stir everything together carefully.

Step 5: Simmer and Melt the Cheese

  • Cover the skillet with a lid and let it simmer for 10 minutes, stirring occasionally.

  • Once the pasta is tender, remove the lid and sprinkle 1 cup of shredded cheddar cheese on top.

  • Cover again for 2 minutes until the cheese melts.

Step 6: Serve & Enjoy!
