This dish is not only budget-friendly (costing around $12), but it’s also packed with flavor and can feed a family of four or five. Plus, it’s a one-pan meal, making cleanup a breeze. Let’s dive into the recipe!
Ingredients:
½ tbsp oil
1 lb medium ground beef
½ small onion, chopped
3 cloves garlic, chopped
1 box Kraft Dinner (or any mac & cheese mix)
1 can (14 oz) diced tomatoes (undrained)
1 cup milk (2% or whole milk)
2 tsp Italian seasoning
½ to 1 tsp salt (to taste)
1 to 2 tsp ground black pepper
1 cup frozen peas
1 cup canned or fresh corn
1 cup shredded cheddar cheese
Instructions:
Step 1: Brown the Beef
Heat ½ tbsp of oil in a large skillet over medium-high heat.
Add 1 lb of ground beef and break it up as it cooks.
Fry until the beef is browned (about 5 minutes).
Step 2: Sauté the Aromatics
Push the beef to one side of the pan.
Add ½ a small chopped onion and 3 cloves of chopped garlic.
Sauté for 2-3 minutes, until fragrant.
Mix everything together.
Step 3: Add the Mac & Cheese and Liquids
Sprinkle the cheese packet from the Kraft Dinner over the beef.
Pour in 1 can of diced tomatoes (undrained) and 1 cup of milk.
Add the pasta from the Kraft Dinner and stir gently.
Step 4: Season & Add Veggies
Season with 2 tsp Italian seasoning, ½ to 1 tsp salt, and 1 to 2 tsp ground black pepper.
Add 1 cup of frozen peas and 1 cup of canned corn.
Stir everything together carefully.
Step 5: Simmer and Melt the Cheese
Cover the skillet with a lid and let it simmer for 10 minutes, stirring occasionally.
Once the pasta is tender, remove the lid and sprinkle 1 cup of shredded cheddar cheese on top.
Cover again for 2 minutes until the cheese melts.
Step 6: Serve & Enjoy!
Spoon this cheesy, hearty Shipwreck Skillet onto plates and dig in! The flavors are incredible, and it’s a great way to use up pantry staples while making a delicious meal.
